Build the itinerary following the camino's OFFICIAL stages, adapted to the client's daily pace. / Genera el itinerario siguiendo las etapas OFICIALES del camino (referencia comercial de Ourway), adaptado al ritmo del cliente. Pasa SIEMPRE `ritmo` (tranquilo|medio|experimentado, del intake): si una etapa oficial supera ese ritmo se divide añadiendo noches. Si el cliente da un tope de km/día concreto (o va en bici, ~2x), usa `km_max_etapa` en su lugar. NO pases `num_noches` salvo que el cliente fije las noches expresamente (entonces mandan las noches y el ritmo solo avisa). `fecha_inicio` es la fecha de la primera noche (YYYY-MM-DD). Presenta el itinerario al usuario y pide confirmación ANTES de cotizar. Las etapas incluyen coordenadas (origen/destino lat/lng) para dibujar la ruta en la presentación.
