Creates a Stripe Checkout session; no charge happens until the human completes checkout in their browser. Inputs: plan (required; starter or pro), email (optional receipt email), client_id (optional idempotency key). Returns {url, session_id, plan}: give the url to the human; never open or complete it yourself.
