Payload: {event:"order.status_changed", orderCode, state, statusLabel, statusDescription, occurredAt}. Header Fold-Signature: t=<unix>,v1=<hex HMAC-SHA256 of "t.body" with the returned secret>. Works with the connected account or order code + booking email. Max 3 per order.
